Pear Chutney

One of the biggest challenges I found on the elimination diet is not being able to use any tomato products. It’s amazing how much I used tomato in our diet. We grow fresh cherry tomatoes in our garden (they just keep popping up and taunting us with their cheery disposition. Why is it that forbidden foods always seem most appetising?). We keep them alive to give them away to friends. I also have a tray of 24 tins of organic tinned tomatoes in the pantry. Bought just before this diet started. And I simply can’t face throwing them away.

Sausage Rolls with Potato Pastry

Carob Bean Brownies

When I first bought carob powder at the beginning of the elimination diet, I thought for some reason it would taste like cocoa. It didn’t. I wasn’t really impressed the first time I tried it. Not at all. So if you’re new to the elimination diet and are discouraged that you don’t like carob. You are not alone 🙂

Homemade ice blocks : Pear Sorbet

This weather is weird. So warm in the afternoons that the kids go to bed with short summer pj’s and then it gets so cold overnight that I’m getting up to check they have enough layers on. I don’t know why, but I get so worried about them getting cold. I mean what’s the worst that could happen? They’re not actually going to freeze. Our climate is too balmy for that. But I worry none the less. Gotta love those irrational mumma fears ay.

Carob crackles

Chocolate crackles remind me of the 90’s. Birthday parties with soooo many lollies, chocolate spiders, fizzy spiders, cheezels  (putting one on each finger and having orange stained skin), red skins and fairy bread. Sugary bread covered in sugar. Nice. And remember those ice-cream cakes from McDonalds. They were the bees knees. The absolute best.

Green tacos filled with stuff is pretty much my favourite thing to eat at the moment.

So fresh and fun to make with the whole family and full of flavour and crunch.

I changed up the recipe for green tacos with crispy chicken, slaw and chive mayo as we had cooked quinoa I needed to use. I mixed some chopped chives, parsley and salt through the quinoa to make a herby salad.

Then served the iceburg lettuce cups (green tacos) filled with chopped lettuce and red cabbage, quinoa salad, chopped green beans, crispy chicken strips and failsafe hummus.

It was super quick to throw together as I already had the gluten free crispy chicken strips in the freezer so all I had to do was cook them in a frying pan (no defrosting required) and voila!

You could use anything in these green tacos…cooked rice, tinned beans, any failsafe veg or cashews.

Fresh green tacos filled with yummy stuff that the whole family can enjoy!
Ingredients
  • 2 cups red cabbage, finely chopped
  • 2 cups iceberg lettuce, chopped
  • 8-12 lettuce leaves whole (green tacos)
  • 2 cup green beans, chopped into 2cm batons
  • 3 cups of tri-coloured quinoa, cooked and cooled
  • 1/4 cup chives, chopped finely
  • 1 tbsp parsley, chopped finely (up to 1/4 cup if tolerated)
  • 400g [failsafe} frozen crispy chicken strips (see recipe link above)
  • 1 cup {failsafe} hummus (see recipe link above)
  • Rice bran oil to shallow fry
  • Salt
Instructions
  1. Heat frying pan on medium heat with some rice bran oil, and cook frozen chicken strips in batches until golden and crispy*. Drain on paper towel.
  2. Meanwhile, combine the cooked quinoa with the chives and parsley and season with salt to taste.
  3. On a platter or large plate, arrange the remaining chopped veggies and green taco lettuce leaves.
  4. Pour the hummus into a small serving bowl.
  5. Place all the bowls in the middle of the table so people can help themselves and choose what they want to put in.
Notes
*frozen crispy chicken strips: no need to be defrosted before cooking, just whack them in a frying pan with rice bran oil and cook until golden brown both sides.

lamb koftas

{gluten, dairy, soy, egg and nut free}

Note: some of the koftas on the top are pale for my amine sensitive son. My husband and I like them brown as we can tolerate amines 😉 Tips for cooking meat without browning in recipe below.

This was a super simple, yummy dinner we had a few weeks ago. Lamb mince, which I prefer over beef mince gives a fullness of flavour to the koftas while the chives and garlic give it a bit of punch. You need this hit of flavour when you aren’t able to add spices or other herbs.

Serve with Lamb Koftas and Eggy Rice with Lentils.

I was going to order some failsafe sausages from my butcher next week (he has a min 5kg) so seeing as these were such a hit all around (especially with Jack) I think I’ll just order a few kg of lamb mince and make a bunch of these and freeze them. They would make delicious burgers too.

Interestingly when I talked to my local butcher about failsafe meat requirements, he mentioned that he could guarantee the chicken and lamb date of slaughter but not the beef as it came in boxes rather then full carcasses. He could get me lamb and chicken meat that was only a few days old. So I haven’t bought any beef from him yet, only lamb chops, lamb mince and chicken breast. It’s worth chatting to your local butcher about it as they can be super helpful.

And it’s kind of cool having my own butcher. Before this diet, I normally just bought meat from the supermarket as it was easier but I do love the idea of supporting local business and actually speaking to someone that knows what they are talking about. I remember asking the lady working behind the seafood deli at Coles once what she recommended and she replied, “I don’t know, I actually really hate fish”. Um, thanks for that. Haha.

This dinner is a winner. Lovely juicy lamb koftas, crunchy pear salad and salty eggy rice. One of my kid’s favourites.

I love putting all the elements in the middle and serving it in front of the kids so they can see what we’re all eating.

Juicy and full of flavour. These koftas make sausages look real silly.
Ingredients
  • 500g fresh lamb mince
  • 2 tbsp parsley, finely chopped (omit if sensitive).
  • 2 tbsp chives, finely chopped
  • 2-3 cloves garlic, crushed
  • 1/2 cup rice crumbs*
  • Salt to taste (approx 1/2-1 tsp)
Instructions
  1. Place ingredients in a mixing bowl and mix together with your hands until combined.
  2. Divide into 4 large balls, and then in 1/3rd again to make 12 koftas.
  3. Cook on low heat in a frying pan with rice bran oil so as not to brown too much. If you are very sensitive to amines, you could bake them in a medium oven (170c) individually in foil or all together in a baking dish, covered.
Notes
*rice crumbs: I used Casalare rice crumbs from Coles but any bread crumbs would work.

Fresh and crunchy with a delightful sweetness from the fresh pear.
Ingredients
  • 1 cup red cabbage, thinly sliced
  • 1 cup celery, chopped
  • 1/2 tin lentils, drained and rinsed
  • 2 spring onions, chopped
  • 1 ripe pear, pealed, quartered and thinly sliced.
  • 1/4 cup {failsafe) mayo (recipe link above).
  • 1 tbsp chives, chopped
  • 1/4 cup raw cashews, chopped
Instructions
  1. Layer red cabbage, lentils, pear, spring onions, and celery in a large bowl.
  2. Mix mayo with chives and a little bit of water to loosen it up a bit to make the dressing.
  3. Pour mayo dressing on salad and top with chopped cashews. Enjoy!

Eggy rice is a staple in our house. It’s super simple, packed full of protein and kids will love it (adults too)

Great as a side dish or by itself as the ultimate fast food. I usually keep cooked brown rice in the freezer so I can thaw it to make a quick meal for the kids. Great when we come home from the beach late or I’ve run out of food (happens so often! Where does all that food go? It’s meant to last a week and runs out within the first few days…I guess thats what happens with growing kids? either that or I’ve got to check the roof for a hot fingered marsupial).

Great served with lamb koftas and crunchy pear salad.

I normally just do egg and rice but I had some leftover lentils so added them this time, but they could be left out if not tolerated or if the kids aren’t keen.

My husband grew up eating eggy rice and he’s a pretty top bloke…so I’d highly recommend it.

Eggy rice. The ultimate fast food. Simple and filling for little tummies and big ones too.
Ingredients
  • 2 cups cooked brown rice, cooled*
  • 3 free range eggs, whisked
  • 1/2 tin lentils, drained and rinsed**
  • Salt to taste
  • 1 tbsp Nuttlex or oil***
Instructions
  1. In a small frying pan on medium heat, add nuttlex (or butter) and melt.
  2. Add whisked eggs and stir.
  3. While the eggs are still ‘just wet’, add the brown rice and lentil and using your spoon, break the eggs apart and stir to combine.
  4. Add a pinch of salt. Serve and enjoy!
Notes
*brown rice: you could also use white rice.[br][br]**lentils: you could use any type of tinned or cooked lentil or omit if not tolerated or desired. I don’t normally add them but they do add a good punch of protein.[br][br]***nuttlex: you could use any type of oil or butter/ghee if tolerated.

One of the things I have missed the most since starting the RPAH elimination diet is asian flavours and spices galore. I love using tamari (wheat free soy sauce) and ginger. So much ginger. And I made a cracking pepper beef stir fry with oyster sauce. So salty and peppery and delicious. But no more. Alas.

This poached chicken with chives and garlic actually does a great job of pretending to be authentically asian. Hey, it may not have all the additional flavours and depth one is used to when eating Vietnamese, BUT it is really yummy and fresh and reminds me of pork and chive dumpings. Now that is an idea for another failsafe creation (minus the pork which isn’t failsafe).

This poached chicken with chives and garlic goes with my rice paper roll recipe, but would also be great on a sandwich, in a salad, on top of a veggie stack of some sort, even in a green taco (cause you know how much I love putting things into the blessed green taco aka iceberg lettuce leaf). It would be really smashing with a dollop of old-school mayo too. Yum!

If you’ve never poached anything before. Don’t fear. I had never done it before until about a year ago, when I though “what the heck, I’ll give it a whirl”. It seemed a strange notion to put chicken in water. Weird. Would it go soggy and be water logged?

Well I can safely tell you that it won’t get soggy or water logged. It’s a really healthy (requires no oil for frying) method and is easy to master.

This chicken schnitzel/crispy chicken strips recipe is a keeper. It’s gluten free, dairy free but NOT taste free. Infact, I’m pretty sure it was the crunchiest schnitzel I’ve ever eaten. My son bit down on a piece and the windows nearly shattered…(ok, maybe that was a bit of an exaggeration..please excuse me…I’m getting carried away in the excitement).

This recipe is great TWO ways…

For schnitzels: serve crispy chicken schnitzel with quinoa salad or potato mash with sautéed brussel sprouts and red cabbage.

For crispy chicken strips: the green tacos and crispy chicken strips with chive mayo or the green tacos with crispy chicken strips, quinoa salad and hummus.

MAKE IN BULK. I’ve been buying 2kgs of fresh chicken breast from my butcher, cutting them into strips, crumbing the whole lot and freezing in family portions. We now have a month’s worth of crispy chicken strips in the freezer. That my friend is a win on this diet!

However you like to eat chicken, this recipe will take it to a crunchier, tastier dimension!

Kids love it too. And on this diet, that’s super important.

crispy chicken schnitzel or strips (gluten free!)
Serves: 8
Delicious, crunchy chicken that is also gluten and dairy free. Makes 2-3 meals for 4 people (eat 1, freeze 2)
Ingredients
  • 1kg free range chicken breast
  • 3 cups of crumb mix * {see note}
  • ½ tsp salt
  • 1 cup gluten free flour **
  • 1 free range egg
  • 3/4 cup milk ***
  • 1 clove garlic, crushed
  • Rice bran oil to cook with
Instructions
  1. Place your hand flat on the chicken breast and slice in half horizontally. Continue with each breast. Lay the halves on a cutting board, cover with baking paper and gently bash with a rolling pin until even in thickness ^ (if you would like to make chicken nuggets/strips, cut them to size at this stage).
  2. Place the chicken in a large glass container with ¾ cup of milk and 1 clove crushed garlic. Marinate while you get the rest of the ingredients together (or for a few hours if you have the time).
  3. In 3 separate large bowls, place in 1. crumb mix and salt, 2. egg, 3. gluten free flour.
  4. After marinating, pour the milk from the chicken into the egg bowl and whisk to combine.
  5. Pick up a piece of chicken and place it in the flour, coat and then cover in the egg/milk wash, then dip into the crumb mix and press down so it sticks. Place on a plate and continue with the remainder of the chicken.
  6. Freeze whatever you won’t eat for that meal in freezer bags, separating with baking paper.
  7. Heat a large non-stick frying pan to medium heat and add a good splash of rice bran oil. Cook the chicken in batches until golden brown and cooked through ^^
  8. Slice it if you like or leave it whole and serve immediately!
Notes
Wipe out the pan after each batch as the oil colours the crumbs and can burn it.[br][br]* gluten free crumb mix: 2 cups rice crumbs (Casalare from Coles is failsafe), 1 cup fresh bread crumbs (I wizz my own up in a food processor using our failsafe gluten free bread crusts) and ½ cup self raising flour. You could use any mix you like including quinoa flakes, oats (if gluten is tolerated) or other gluten free crumbs (make sure they are failsafe).[br][br]** flour: I used gluten free plain flour. You could use rice flour, buckwheat or arrowroot (tapioca).[br][br]*** milk: I used rice milk as we are dairy free. You could use cows, goats, soy or almond milk.[br][br]^ Bashing the chicken with a rolling pin not only tenderises it, but it flattens it ensuring it will cook evenly and more quickly.[br][br]^^ Browning the crumbs won’t increase the amine levels! Crumbing the meat is a clever way to get colour and crunch without browning the meat and increasing the amine levels.

This quinoa, cashew and chickpea salad is surprisingly fresh and delicious. I wouldn’t have known it was failsafe cause it doesn’t taste ‘vaguely like something’ (is it just me or does the failsafe diet pretty much take out all the good bits and leave you with the most boring veggies on earth?). It is however a good challenge to use these veggies that are considered ‘boring’ and give them a chance to shine (turning lemons in to lemonade and all that). Anyway, this salad, it’s just good.

Oh this hot weather calls for some refreshing sorbet! What fruit is on the menu…why pears of course!?

I remember when I first looked at the elimination diet list hoping, praying for some fun, summery fruits to be included. Perhaps mango, passionfruit or raspberries (the latter two we are currently growing in our garden. Wahh). The wave of disappointment when I saw only pears (and peeled at that!). That must be the most boring fruit of them all I said.

Failsafe Falafels. Um, you mean boring balls of veg. Can they be done successfully without all the spice and pomp? Yes, yes they can. What is my measure of success? Both my kids woofed it down for lunch and with a mouth full of hummus (aka falafel sauce), my toddler Jack said “v’ese are so yummo mum!” and then giggled to himself because he said ‘yummo’ instead of ‘yum’. What a kid! For someone who has been more picky than ever lately (I think this whole diet thing is starting to wear thin…I don’t blame him)…this was a wonderful result!

Who doesn’t love hummus? It’s just great. Full of protein and flavour.

This hummus recipe is based on Sandra’s genius blog, Cooking for Oscar. What a woman!

The tahini is replaced by pear puree which gives it a smoothness without being too sweet. The lemon is replaced by citric acid for the zing. A hint of garlic makes it feel a little authentic in flavour.

One little tip I’ve added is to pour in a little water at the end. It helps loosen up the hummus a bit and makes it really creamy and smooth.

Maple Shortbread Biscuits

Delicious ‘buttery’ (without the butter), maple sweetened biscuits that will please both failsafe and non-failsafers alike.

This recipe is based on a vegan recipe I found online and must be one of the most simple biscuit recipes out there. With pantry and staple fridge ingredients you can create these delicious biscuits in no time!
