A delightful, crunchy salad with a delightful sweetness from the fresh pear and creamy mayo dressing.

Serve with Lamb Koftas and Eggy Rice with Lentils.

crunchy pear salad with mayo dressing
Recipe Type: Lunch, Dinner, Salad
Fresh and crunchy with a delightful sweetness from the fresh pear.
Ingredients
  • 1 cup red cabbage, thinly sliced
  • 1 cup celery, chopped
  • 1/2 tin lentils, drained and rinsed
  • 2 spring onions, chopped
  • 1 ripe pear, pealed, quartered and thinly sliced.
  • 1/4 cup {failsafe) mayo (recipe link above).
  • 1 tbsp chives, chopped
  • 1/4 cup raw cashews, chopped
Instructions
  1. Layer red cabbage, lentils, pear, spring onions, and celery in a large bowl.
  2. Mix mayo with chives and a little bit of water to loosen it up a bit to make the dressing.
  3. Pour mayo dressing on salad and top with chopped cashews. Enjoy!
