I’d seen delicious looking rice paper rolls at the shops and decided to make our own failsafe ones for lunch.

Rice paper rolls are good fun…they take a bit of preparation cutting everything up…but it’s so worth it.

We put everything on the table and the kids watched with big eyes as we chose the fillings and rolled their lunch (older kids would enjoy rolling their own).

I was worried that they would be a bit bland without all the yummy Asian sauces and condiments but the poached chicken with garlic and chives is really delicious and gives a salty, garlicky hit.

Have a play around with some dipping sauces. I listed mine below but I didn’t get actual measurements for them as I was in a bit of a hurry.

These are perfect for summer with the freshness and crunch of the veg.

And we all tried raw chokos for the first time too. They are interesting but a bit underwhelming raw. I’m sure they’ll grow on me.

Summer food at its finest. Fresh, crunchy and delicious!
Ingredients
  • – 1 poached chicken breast with chives (recipe link above)
  • – red cabbage
  • – iceberg lettuce
  • – bean sprouts
  • – celery sticks
  • – beans, halved
  • – spring onions chopped
  • – peeled choko, cut into matchsticks
  • – rice noodles, cooked
  • – rice paper sheets
Instructions
  1. Chop up and prepare all the ingredients and place on a platter or in single bowls in the middle of the table.
  2. Dip the rice paper sheets into a bowl of warm water for 5 seconds or so.
  3. Place on a plate and fill with toppings.
  4. Roll and eat straight away.
  5. Enjoy!
Notes
Dipping sauces- basically just ingredients thrown together until they tasted yum. [br][br]Cashew sauce: 2 tbsp cashew butter loosened with a splash of hot water (mix well), a dash of oil, garlic, citric acid, maple syrup and salt.[br][br]Pesto sauce. 2 tsp parsley and cashew pesto with a dash of hot water, rice bran oil, salt, citric acid, maple syrup and chopped spring onions.
