I’ve been craving burgers something chronic lately and this little recipe I came up with while we were camping at Christmas and it pretty much ticks all the burger boxes.

It’s crunchy, saucey, fresh and delicious! Using iceberg lettuce for the taco is brilliant (thanks Pinterest). It’s the quickest and healthiest gluten free taco too.

I made a bulk batch of the {gf} crispy chicken strips, divided it into 4 meals and froze 3.

The chive mayo really makes it. You only use 1 cup of homemade old-school mayo in the recipe so you could use the rest for a potato salad later in the week or as salad dressings.

I’ve found it really helpful on this diet to make a few things at the start of the week and use them for different meals eg. mayo or pesto.

If you are egg free, you could sub the mayo for hummus.

Fresh, simple and a fun take on tacos.
  • 400g homemade crumbed chicken strips (recipe link above)
  • 1 iceberg lettuce
  • 1-2 cups red cabbage, shredded
  • 1/4 cup spring onions, chopped
  • 1/4 cup cashews, chopped (omit if sensitive)
  • 1 can red kidney beans, drained and rinsed thoroughly **
  • 1 cup homemade failsafe mayo (recipe link above)
  • 2 tbsp chives
  • Splash water
  1. Cook chicken strips in rice bran oil until golden brown on both sides, drain on paper towel and keep warm.
  2. Carefully pull the leaves off the iceberg lettuce reserving 8-10 for the green tacos.
  3. Take an additional few lettuce leaves or the really small ones, shred and place in another bowl.
  4. Make the chive mayo by mixing the mayo with chives. Add salt to taste and a splash of water to loosen it up a bit.
  5. Place the remaining ingredients in a separate bowls so people can choose their own fillings. Alternatively you can mix all the veg together in a big bowl and stir through the chive mayo like a coleslaw for quick assembly.
*red kidney beans: you could use any failsafe beans like chickpeas, butter beans, 3 bean mix or cooked rice/quinoa. Make sure any tinned beans are thoroughly rinsed.
