Rainbow Salad Bowl with Falafels and Hummus

{gluten, dairy and soy free. could omit eggs and nuts}

This rainbow salad bowl with falafel and hummus is pretty much my favourite (failsafe) thing to eat at the moment. It’s full of crunch, flavour, creaminess, protein, veg. It’s so good.

Got any vegetarian friends? They’d be stoked with this. Got any non-failsafe friends? They’d also be stoked with this. Got any failsafe family members? Give this a whirl. It’s filling and yet contains no meat. Revolutionary, to a meat eater like myself.

I’m keen to each more meat-less meals. One; so I can afford to buy better quality meat (grass fed without hormones etc) and Two; so we can try more veggie only meals. It’s a challenge I’m forcing myself to take. And I’m excited to see what veg only recipes I come up with (with the help of my trusty research skills and the world wide web).

Whats so great about this meat-less salad?

It’s delicious!

It will fill your tummy right up.

It’s colourful and fun to make.

It will make your insides sing (and possibly your bottom. hehe)

It’s got crunch from the raw veg, creaminess from the hummus, zing from the dressing, protien packed egg and falafel and nuttiness from the cashews.

Rainbow Salad Bowl with Falafel and Hummus

A delicious, fresh and crunchy salad that will blow you away with it’s prettiness, textures and flavours. This is one of my favourite lunches at the moment.
  • ½ cup red cabbage, thinly shaved
  • ½ cup celery, chopped
  • ½ cup iceburg lettuce, chopped
  • ½ cup green beans, chopped
  • 1 tbsp raw cashews, chopped roughly (omit if sensitive)
  • 2 free range eggs
  • 2 tsp poppy seeds
  • 1 cup hummus (recipe in link above)
  • 2 tbsp zingy dressing (recipe in link above)
  • 10 friendly falafels, cooked (recipe in link above)
  1. Heat water in a small saucepan and gently boil eggs for 5-10 minutes or until cooked to your liking. Cool under running water and peel the shell off.
  2. Arrange ½ of the red cabbage, celery, iceburg lettuce and beans in rows in each bowl.
  3. Place the falafels (normally 4-5 each) and egg on each salad.
  4. Scoop ½ cup of {failsafe} hummus on each salad and make a little pool in the middle with a spoon.
  5. Pour in 1 tbsp of dressing in each pool and sprinkle on the poppy seeds.

  4. Hi Laura! I’m looking forward to trying this recipe; I’m just wondering about the zingy dressing you mentioned- the recipe doesn’t seem to be hyperlinked like the other two and I can’t find the it anywhere else?!

    1. Hi Elisa. I’m so sorry for the erroneously late reply. We have given the diet a break for a bit but are getting back into it now 😉 I had a look at I realised I haven’t uploaded the recipe for the zingy dressing. I will get onto it soon! Thanks for the heads up. Laura
